Quinoa with Hemp Seeds and Cilantro Lime Vinaigrette


· 1/2 cup quinoa, dry

· 1 red bell pepper chopped

· ¼ cup dried craisins

· 2-3 tablespoons hemp seeds

· ¼ cup chopped cilantro

· 2 large carrots chopped

· 1 can chickpeas, drained and rinsed

Cilantro Lime Vinaigrette

· 4 tablespoons fresh lime juice

· 2 cloves of garlic, finely chopped

· 1 teaspoon sugar

· 1 teaspoon salt

· ¼ teaspoon ground coriander

· 4 tablespoons extra-virgin olive oil

· 2 tablespoons chopped fresh cilantro


1. Cook ½ cup quinoa according to directions on back of package. Cool before using.

2. While quinoa is cooling, chop red bell pepper, cilantro and carrots into bite size pieces.

3. In a large bowl mix together cooked quinoa, chopped vegetables, craisins, hemp seeds and chickpeas together and stir till combined.

4. In a jar with a lid, add in all vinaigrette ingredients. Twist lid on tightly and shake until combined.

5. Pour cilantro lime vinaigrette over the quinoa mixture and stir till combined.
